Ingredients

  • 1½ pounds Italian sausage links (mild or hot)
  • 2 tablespoons olive oil
  • 1 large yellow onion, sliced
  • 1 large red bell pepper, sliced
  • 1 large green bell pepper, sliced
  • 1 large yellow bell pepper, sliced
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • ½ teaspoon smoked paprika
  • ¼ teaspoon crushed red pepper flakes (optional)
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup chicken broth
  • 1 tablespoon tomato paste (optional, for a richer sauce)
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Heat 1 tablespoon olive oil in a large skillet over medium-high heat.
  2. Add the sausage links and brown on all sides, about 8–10 minutes. Remove and set aside.
  3. Add the remaining olive oil to the skillet.
  4. Cook the sliced onions and bell peppers for 8–10 minutes, stirring occasionally until softened.
  5. Stir in the garlic, Italian seasoning, smoked paprika, and red pepper flakes. Cook for 1 minute.
  6. Add the chicken broth and tomato paste (if using), stirring to combine.
  7. Return the sausages to the skillet and nestle them into the vegetables.
  8. Cover and simmer over medium-low heat for 12–15 minutes, or until the sausages reach an internal temperature of 160°F (71°C).
  9. Sprinkle with fresh parsley and serve hot.
